Spiced Molasses Cookies: A Perfect Thanksgiving Treat

- 3/4 cup unsalted butter softened
- 1 1/4 cup granulated sugar
- 1/4 cup dark brown sugar packed
- 1/4 cup molasses
- 1 large egg
- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
Preparing the Dough
In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and dark brown sugar until light and fluffy, about 3-5 minutes.
Beat in the molasses and egg until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground ginger, ground cloves, and ground nutmeg.
Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined.
Baking the Cookies:
Preheat your oven to 350°F (175°C).
In a small bowl, mix together 1/4 cup granulated sugar and 1 teaspoon ground cinnamon.
Scoop tablespoon-sized portions of dough and roll them into balls.
Roll each ball in the cinnamon-sugar mixture to coat.
Place the dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
