Mixed Summer Salad with Watermelon, Blueberries, Feta, and Grilled Shrimp

- 4 cup mixed salad greens
- 1 cup watermelon bite-sized cubes
- 1 cup blueberries
- 1/2 cup crumbled feta cheese
- 1 lbs shrimp peeled and deveined
- 1 tbsp olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tbsp honey
- 1 tsp Diion mustard
Grilling the Shrimp:
Toss the shrimp in a bowl with olive oil, a pinch of salt, and freshly ground black pepper.
Heat up your grill or a grill pan over medium-high heat.
Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.
Set the shrimp aside to cool slightly.
Making the Dressing:
In a small mixing bowl, whisk together the balsamic vinegar, olive oil, honey (or maple syrup for a vegan option), Dijon mustard, and a pinch of salt and pepper.
