Ingredients

  • 4 cup mixed salad greens
  • 1 cup watermelon bite-sized cubes
  • 1 cup blueberries
  • 1/2 cup crumbled feta cheese
  • 1 lbs shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 tsp Diion mustard

Instructions

Grilling the Shrimp:

  • Toss the shrimp in a bowl with olive oil, a pinch of salt, and freshly ground black pepper.
  • Heat up your grill or a grill pan over medium-high heat.
  • Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.
  • Set the shrimp aside to cool slightly.

Making the Dressing:

  • In a small mixing bowl, whisk together the balsamic vinegar, olive oil, honey (or maple syrup for a vegan option), Dijon mustard, and a pinch of salt and pepper.
  • Whisk until the ingredients are well emulsified, creating a smooth, rich dressing.

Making the Salad:

  • In a large salad bowl, combine the mixed greens, juicy watermelon cubes, and fresh blueberries.
  • Add the grilled shrimp to the bowl.
  • Drizzle the homemade dressing over the top and gently toss the salad to ensure everything is well coated.
  • Sprinkle the crumbled feta cheese over the salad.
