Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese grated
  • 1 cup sun-dried tomatoes chopped
  • 3 cups fresh spinach chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 lemon juiced

Instructions

Mixing it all:

  •  In a mixing bowl, combine the pancake mix, milk, eggs, lemon zest, sugar, melted butter, vanilla extract, and salt.
  • Mix until just combined and no large lumps remain.
  • Let the batter rest for 5 minutes.

Season and Sear the Salmon:

  • Season the salmon fillets with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the salmon fillets, skin-side down, and cook for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

Prepare the Creamy Sauce:

  • In the same skillet, melt the butter.
  • Add minced garlic and diced onion, sautéing until fragrant and the onion is translucent, about 3-4 minutes.
  • Pour in the heavy cream and chicken broth, stirring to combine.
  • Add grated Parmesan cheese and Italian seasoning, stirring until the cheese has melted and the sauce thickens slightly.
  • Stir in baby spinach leaves and sun-dried tomatoes, cooking until the spinach has wilted.

Combine & Serve

  • Return the salmon fillets to the skillet, spooning some sauce over the top.
  • Let everything simmer together for a few minutes to heat through.
  • Serve the salmon fillets with the creamy sauce, accompanied by lemon wedges.
