Instructions
Mixing it all:
In a mixing bowl, combine the pancake mix, milk, eggs, lemon zest, sugar, melted butter, vanilla extract, and salt.
Mix until just combined and no large lumps remain.
Let the batter rest for 5 minutes.
Season and Sear the Salmon:
Season the salmon fillets with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the salmon fillets, skin-side down, and cook for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
Prepare the Creamy Sauce:
In the same skillet, melt the butter.
Add minced garlic and diced onion, sautéing until fragrant and the onion is translucent, about 3-4 minutes.
Pour in the heavy cream and chicken broth, stirring to combine.
Add grated Parmesan cheese and Italian seasoning, stirring until the cheese has melted and the sauce thickens slightly.
Stir in baby spinach leaves and sun-dried tomatoes, cooking until the spinach has wilted.
Combine & Serve
Return the salmon fillets to the skillet, spooning some sauce over the top.
Let everything simmer together for a few minutes to heat through.
Serve the salmon fillets with the creamy sauce, accompanied by lemon wedges.
