Step #1: Making the Crust

  • In a large bowl, whisk together the flour, salt, and sugar.
  • Add the chilled butter cubes and use a pastry cutter to work the butter into the flour mixture until it resembles crumbs.
  • Gradually add the ice water and mix under the dough comes together.
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Step #2: Preparing the Filling

  • Whisk together the pumpkin puree, brown sugar, cinnamon, ginger, cloves, nutmeg, and salt.
  • Beat in the eggs one at a time, then stir in the heavy cream and milk until the mixture is smooth.

Step #3:Assembling the Pie

  • Preheat your oven to 425°F
  • On a highly floured surface, roll out the dough to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess, leaving a 1-inch overhang. Fold the overhang under itself and crimp the edges.
