Step #1: Preparing the Dough

  • In a large bowl, beat the softened butter and sugar together until light and fluffy.
  • Add the egg and vanilla extract, and beat until well combined.
  • Whisk together the all-purpose flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
  • Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined.

Step #2: Chill the Dough:

  • Cover the dough with plastic wrap and refrigerate for at least 1 hour, or until firm.

Step #3: Baking the Cookies

  • Preheat your oven to 350°F (175°C).
  • Mix together the granulated sugar and cinnamon.
  • Scoop tablespoon-sized portions of dough and roll them into balls.
